Chairman's Reserve Prime Filets

Directions

1. Prepare the marinade. For this you’ll need to mix the following in a bag: 2 cups pineapple juice, 1/2 cup soy sauce, 1/2 cup sugar, 5 tbs apple cider vinegar, 2 tsp toasted sesame oil, 1/3 cup chopped white onion, 1-inch piece of ginger (peeled and finely chopped). This marinade is enough for 3 pounds of meat.
2. Refrigerate the marinade in the baggie with the meat for at least an hour (the longer the better).
3. Set your cooker for 275F.
4. Cook covered for 8 minutes. Flip and repeat. Remove steaks and turn your cooker to high or let the coals rage uncovered to get a nice sear.  Sear for 1 minute, turn 90 degrees and sear for another minute (to get those nice sear marks). Flip and repeat.
5. Remove from the cooker, rest and prep to serve.
