Turkey Quesa Tacos | Crispy Griddle Taco Quesadilla Recipe

These Turkey Quesa Tacos smash together everything we love about tacos and quesadillas into one crispy, cheesy, griddle-seared masterpiece. Think juicy ground turkey loaded with bold seasoning, melty cheese, golden tortillas, and that irresistible crunch when you take the first bite.

We build bold flavor first. Ground turkey gets hit with Big Poppa’s Jallelujah Jalapeño & Lime Seasonings, then finished with taco seasoning and salsa for extra punch. After that? Cheese down, meat in, fold, press, and crisp until golden brown perfection.

What You’ll Need

  • 1 lb ground turkey
  • 1 pack Siete Taco Seasoning (mixed with water as directed)
  • 1/3 sweet onion, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 jalapeño, chopped
  • Big Poppa’s Jallelujah Jalapeño Seasoning
  • Big Poppa’s Jallelujah Lime Seasoning
  • Flour tortillas
  • Mexican-style shredded cheese
  • 4-cheese shredded blend
  • 3–4 tsp salsa
  • Mexican crema
  • Shredded lettuce
  • Avocado slices (optional)
  • Oil for the griddle

How to Make Turkey Quesa Tacos

1) Preheat the Griddle

Heat your griddle to medium-high. Lightly oil once hot.

2) Brown the Turkey

Add ground turkey to the griddle. Season generously with Jallelujah Jalapeño and Jallelujah Lime. Chop and break apart as it cooks.

3) Add Veggies

Toss onion, bell pepper, and jalapeño onto the griddle. Season lightly and cook until softened.

4) Build the Flavor

Mix turkey and veggies together. Stir in prepared taco seasoning mixture. Add 3–4 teaspoons salsa and mix well.

5) Build the Quesa Tacos

Remove filling and re-oil griddle lightly. Lay tortillas flat. Sprinkle cheese over half of each tortilla, add turkey mixture, then fold closed.

6) Crisp & Melt

Cook until both sides are golden brown and crispy and the cheese is fully melted.

7) Top & Serve

Open tacos, drizzle Mexican crema, add shredded lettuce and avocado, then close and serve immediately.
