1 ½ lb ground beef

½ lb ground pork

1 cup ground pork skin

6 puréed mushrooms

2 celery stalks, chopped

1 carrot, chopped

1 onion, chopped

½ red bell pepper, chopped

4 cloves garlic, chopped

Bacon bits – as desired

2 tbsp tomato sauce

Soy sauce – splash

½ cup milk

½ cup chicken stock

1 egg
-
½ cup Granny’s BBQ Sauce

½ cup ketchup

Splash of Worcestershire sauce
For the Glaze:
Directions
In a large bowl, combine ground beef, pork, and pork skin. Add puréed mushrooms, the chopped veggies, bacon bits, tomato sauce, a splash of soy sauce, milk, chicken stock, and the egg. Season with Cash Cow and Little Louie’s Seasonings. Gently mix until just combined—do not overmix.
Preheat your oven to 350°F (175°C). Spray a loaf pan with oil and shape the meat mixture into a loaf. Transfer onto a double layer of foil to create a second loaf if needed.
In a small bowl, mix Granny’s BBQ Sauce, ketchup, and Worcestershire sauce.
Brush the meatloaf with the glaze and place it on a preheated grill or in the oven. Use foil to help maintain the loaf’s shape. Bake for 25 minutes, then baste with additional glaze.
Insert a meat thermometer after 25 minutes and continue cooking until the internal temperature reaches 160°F (71°C), about 15-20 minutes longer.
Remove the meatloaf from the oven, let it rest for a few minutes, and slice. Serve with your favorite sides, such as mashed potatoes or roasted vegetables.
