It’s a dish that’s sure to warm you up and keep you satisfied all morning long. Plus, cooking it in a cast iron skillet adds an extra level of flavor and crispiness that can’t be beat. Ingredients
- Raw Biscuits of choice (Big Poppa like Trader Joes Biscuits)
- Ground sausage (Big Poppa used Jimmy Deans)
- Big Poppa’s Little Louies Seasoning
- Big Poppa’s Jallelujah Seasoning
- Big Poppa’s Cash Cow Seasoning
- Eggs
- Flour
- Butter
- Red Taco Sauce
- Mexican crema
- Pepper Colby jack cheese
- Cheddar cheese
Directions
Preheat your grill/oven to 350 degrees
- Let’s start by making our Gravy n’ Sausage. Take your ground sausage and brown it up on your skillet over medium heat
- Once browned/caramelized add in 1/3 cup of flour and stir
- Season with some of Big Poppa’s Cash Cow and Big Poppa’s Little Louies Seasoning
- Add 3 cups of milk and stir until gravy thickens
- Now that your gravy is done, spray your cast iron with some cooking oil
- Slice raw biscuits into halves (like burger buns) and start by adding a layer of biscuits in the cast iron skillet
- Whisk 6-8 eggs in a bowl and add in a splash of red taco sauce, about 1/3 cup of Mexican cream, season with Big Poppa’s Jallelujah jalapeño and whisk again.
- Pour 3/4 of the eggs over the layer of biscuits and place the cast iron skillet in your preheated grill/oven for about 15 min
- Take out skillet from grill/oven and add a layer of cheese, the remaining eggs, gravy n’ sausage, and finish by topping off with a layer of biscuits
- Put back in grill/oven for another 30-40 minutes or until internal temp is 200 and biscuits are nice and golden brown
- Let cool down, serve, and enjoy!
