Directions
Prepare the Batter: In a bowl, combine 1 cup of flour, 1/4 cup of corn starch, 1 teaspoon of baking powder, 1/4 cup of potato starch, 1/2 tablespoon of Big Poppa’s Jallelujah Lime Seasoning, and 1 1/2 tablespoons of Big Poppa’s Desert Gold Seasoning. Mix thoroughly with a fork.
Prep the Fish: Lightly coat the cod fillets in plain potato starch, ensuring an even coating.
Heat the Oil: Preheat your oil to 375°F (190°C) in a deep fryer or large pot.
Make the Batter: Add 1 can of cold beer to the dry mixture and stir with a fork until the batter is smooth and free of clumps.
