Welcome to the world of drum smoking! Whether you're a seasoned BBQ enthusiast or a backyard cooking newbie, a drum smoker offers a fantastic way to achieve that smoky, tender perfection in your meats. If you've just unboxed your pre-built drum smoker from Big Poppa Smokers, you're in for a treat. In this guide, we'll walk you through the essential steps to get started, ensuring a successful and flavorful first cook.

What is a Drum Smoker?  A drum smoker, also known as a UDS (Ugly Drum Smoker), is a type of smoker made from a 55-gallon steel drum. It’s praised for its simplicity, efficiency, and ability to maintain steady temperatures, making it a favorite among BBQ enthusiasts.

Unboxing and Setting Up Your Drum Smoker

  • Inspect Your Drum Smoker:  Upon receiving your pre-built drum smoker from Big Poppa Smokers, ensure all parts are included and intact. You should have a cooking grate, charcoal basket, lid, and any additional accessories.
  • Placement: Find a flat, stable surface outdoors to place your drum smoker. Ensure it’s away from flammable materials and in a well-ventilated area.
  • Assemble Accessories:  Attach any accessories like temperature gauges, heat deflectors, or cooking racks according to the manufacturer’s instructions
  • Seasoning Your Drum Smoker: Seasoning your drum smoker is crucial for removing any residual manufacturing oils and preparing the interior for cooking.
  • Coat the Interior: Lightly coat the interior surfaces with cooking oil (vegetable or canola oil works well).
  • Light a Fire: Fill the charcoal basket halfway with charcoal, light it, and let it burn for about 2-3 hours with the lid closed. This process will burn off any unwanted residues and create a protective coating on the inside.

Lighting Your Drum Smoker

  • Prepare the Charcoal Basket: Fill the charcoal basket with high-quality lump charcoal or briquettes. Adding a few wood chunks for extra smoke flavor is also recommended.
  • Light the Charcoal: Use a charcoal chimney starter to light a small amount of charcoal. Once the coals are ashed over, add them to the center of the charcoal basket.
  • Adjust the Vents: Open the intake and exhaust vents fully to allow the fire to establish. Once the temperature reaches your desired cooking range (225-275°F is ideal for smoking), adjust the vents to maintain a steady temperature.

Cooking on Your Drum Smoker

  • Preheat the Drum Smoker: Allow your drum smoker to preheat for about 30 minutes. This ensures a stable cooking environment.
  • Add Your Meat: Place your seasoned meat on the cooking grate. Common choices for beginners include pork ribs, chicken, or a Boston butt.
  • Monitor the Temperature: Use a reliable meat thermometer to monitor the internal temperature of your meat. Drum smokers from Big Poppa Smokers come with built-in temperature gauges for convenience.
  • Maintain the Fire: Check the charcoal and wood chunks periodically, adding more as needed to maintain consistent heat and smoke.
  • Spritz and Wrap: For longer cooks, spritz the meat with apple juice or another liquid to keep it moist. You may also wrap the meat in foil or butcher paper once it reaches a specific color or bark formation.

Finishing and Serving

  • Rest the Meat: Once your meat reaches the desired internal temperature, remove it from the smoker and let it rest for at least 15-30 minutes. This allows the juices to redistribute, ensuring a juicy and flavorful bite.  This is one of the biggest mistakes cooks make that they aren’t patient enough.  LET THE MEAT REST!
  • Slice and Serve: Slice the meat against the grain and serve it with your favorite BBQ sides. Enjoy the fruits of your labor!
