Ingredients

For the Turkey:

• 1 boneless organic turkey breast (3–4 lbs)

• 2 tbsp lemon olive oil (or regular olive oil)

For the Focaccia:

• 3 ¾ cups all-purpose flour

• 1 ½ tsp salt

• 1 packet active dry yeast

• 1 ½ cups warm water

• Olive oil (for drizzling)

• 1 tsp Italian seasoning

• Sea salt, for topping

For the Sandwich:

• Sliced rotisserie turkey breast

• Homemade focaccia, sliced

• ½ cup mayonnaise or aioli

• 1 cup shredded or sliced mozzarella

• Drizzle of mango vinaigrette or glaze
