Big Poppa’s Sheet Pan Sliders

Ingredients:
- Siete Taco Seasoning (Mild)
- 1 Can Rotel Diced Tomatoes & Green Chiles
- 2 lbs ground beef
- Sliced sweet onions
- Thinly sliced jalapeños
- Big Poppa Jallelujah Jalapeño Seasoning
- Shredded cheese
- Mayonnaise
- La Victoria Red Taco Sauce
- Rolls
- Shredded lettuce
Directions:
- Preheat Smoker: Set your smoker to 400°F.
- Prepare Sauce: In a blender, combine 2/3 cup of water, 1 packet of Siete Taco Seasoning (Mild), and 1/2 can of Rotel Diced Tomatoes & Green Chiles (use as little juice as possible).
- Mix Meat: Fold the blended sauce into the ground beef and mix well. Season with Big Poppa’s Jallelujah Jalapeño Seasoning and mix again.
- Prepare Sheet Pan: Spray a sheet pan with oil. Lay a base of sliced sweet onions and sliced jalapeños.
- Form Meat Layer: Evenly press the seasoned ground beef over the veggies on the sheet pan and dust with more Big Poppa’s Jallelujah Jalapeño Seasoning.
- Cook on Smoker: Place the sheet pan in the smoker. Check after 15-20 minutes.
- Add Cheese: Sprinkle shredded cheese over the meat and close the lid to melt the cheese.
- Make Sauce: In a bowl, combine mayonnaise, La Victoria Red Taco Sauce, and a sprinkle of Big Poppa’s Jallelujah Jalapeño Seasoning. Mix well.
- Assemble Sliders: Slice the cooked meat into portions to fit your rolls. Spread the sauce on the inside of the rolls. Add a base of shredded lettuce, then place the meat patties, and top with tomato slices. Cover with the top half of the rolls.
